Italian Deli Pasta Salad Recipe
A refreshing and hearty pasta salad with flavors straight from an Italian deli.

Main Ingredients
- 8 oz Rotini pasta uncooked
- 1 cup Cherry tomatoes halved
- 1 cup Cucumber diced
- ½ cup Red onion thinly sliced
- ½ cup Kalamata olives pitted and halved
- ½ cup Pepperoni sliced
- ½ cup Mozzarella cheese cubed
- ¼ cup Fresh basil chopped
Dressing
- ¼ cup Olive oil
- 2 tablespoon Red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove Garlic minced
- 1 teaspoon Dried oregano
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
Cook the pasta according to package instructions. Drain and rinse under cold water.
In a large mixing bowl, combine the pasta, cherry tomatoes, cucumber, red onion, olives, pepperoni, mozzarella, and basil.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper.
Pour the dressing over the pasta salad and toss to combine.
Chill in the refrigerator for at least 30 minutes before serving.
