Dough
- 4 cups all-purpose flour
- 1 cup unsalted butter cold and cubed
- 1 teaspoon salt
- ½ cup ice water
Filling
- 1 cup ricotta cheese
- 1 cup mozzarella cheese shredded
- ½ cup parmesan cheese grated
- 4 eggs beaten
- 1 cup ham diced
- 1 cup salami diced
- ¼ cup parsley chopped
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, combine the flour and salt. Add the cold butter and mix until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together.
3. Divide the dough into two pieces, wrap in plastic wrap, and refrigerate for at least 30 minutes.
4. In another bowl, combine the ricotta, mozzarella, parmesan, beaten eggs, ham, salami, and parsley. Mix well.
5. Roll out one piece of dough and line a baking dish with it. Add the filling and spread evenly.
6. Roll out the second piece of dough and cover the filling. Seal the edges and cut a few slits on top to allow steam to escape.
7. Bake for 60 minutes or until the crust is golden brown. Let it cool slightly before serving.
