- 4 pieces Chicken Breasts boneless, skinless
- ½ cup All-Purpose Flour
- 1 teaspoon Salt
- ½ teaspoon Black Pepper freshly ground
- 4 tablespoons Butter divided
- 2 tablespoons Olive Oil
- 1 cup Chicken Broth
- ¼ cup Lemon Juice freshly squeezed
- 2 cloves Garlic minced
- 1 tablespoon Capers drained
- 2 tablespoons Parsley chopped
1. Season the chicken breasts with salt and pepper, then dredge in flour, shaking off any excess.
2. In a large skillet, heat 2 tablespoons of butter and the olive oil over medium-high heat. Add the chicken and cook until golden brown, about 5 minutes per side. Remove chicken from skillet and set aside.
3. In the same skillet, add the garlic and cook until fragrant, about 1 minute. Add the chicken broth, lemon juice, and capers. Bring to a simmer.
4. Return the chicken to the skillet and cook until the sauce has thickened and the chicken is cooked through, about 5-7 minutes. Stir in the remaining 2 tablespoons of butter.
5. Garnish with chopped parsley and serve immediately.
