Ingredients 

Main Ingredients

  • 1 cup green lentils rinsed
  • 2 cups water
  • 1 red bell pepper diced
  • 1 cucumber diced
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions 

  1. 1. In a saucepan, bring water to a boil. Add lentils and cook for about 20-25 minutes until tender. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooked lentils, red bell pepper, cucumber, cherry tomatoes, red onion, and parsley.
  3. 3. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.
  4. 4. Pour the dressing over the salad and toss to combine. Adjust seasoning if necessary.
  5. 5. Serve immediately or refrigerate for later.
