Main Ingredients
- 1 cup lentils rinsed
- 1 medium onion chopped
- 2 cloves garlic minced
- 2 medium carrots chopped
- 2 stalks celery chopped
- 1 can diced tomatoes 14.5 oz can
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
- 2 tablespoon olive oil
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions, garlic, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
3. Stir in lentils, diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
4. Bring to a boil, then reduce heat and let it simmer for about 30-35 minutes, or until lentils are tender.
5. Adjust seasoning if needed. Serve hot.
