  • 1 cup lentils rinsed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots chopped
  • 2 stalks celery chopped
  • 1 can diced tomatoes 14.5 oz can
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onions, garlic, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
  3. 3. Stir in lentils, diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
  4. 4. Bring to a boil, then reduce heat and let it simmer for about 30-35 minutes, or until lentils are tender.
  5. 5. Adjust seasoning if needed. Serve hot.
