Ingredients 

Main Ingredients

  • 1 cup Pistachios shelled and unsalted
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • ¾ cup Sugar
  • 4 large Egg yolks
  • 1 teaspoon Vanilla extract

Instructions 

  1. 1. Blend pistachios with 1 cup of milk until smooth.
  2. 2. In a saucepan, heat the remaining milk, cream, and half of the sugar until it starts to simmer.
  3. 3. In a bowl, whisk egg yolks and the remaining sugar until pale.
  4. 4. Slowly pour the hot milk mixture into the egg yolks, whisking constantly.
  5. 5. Return the mixture to the saucepan and cook over low heat until it thickens.
  6. 6. Stir in the pistachio mixture and vanilla extract.
  7. 7. Chill the mixture in the refrigerator for at least 4 hours.
  8. 8. Churn in an ice cream maker according to the manufacturer's instructions.
