Ingredients 

Main Ingredients

  • 1 cup red lentils rinsed
  • ½ cup brown rice uncooked
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tablespoon olive oil
  • 1 can diced tomatoes 14.5 oz can
  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 2 cups spinach fresh, chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. 2. Add minced garlic and cook for another minute.
  3. 3. Stir in the red lentils, brown rice, diced tomatoes, vegetable broth, oregano, basil, salt, and pepper.
  4. 4. Bring to a boil, then reduce heat to low and simmer for 30-35 minutes, or until the lentils and rice are tender.
  5. 5. Add chopped spinach and cook for another 5 minutes, until wilted.
  6. 6. Adjust seasoning with more salt and pepper if needed. Serve hot.
