Ingredients

  • 2 cups cooked rice
  • 1 cup grated Parmesan cheese
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • 1 cup mozzarella cheese cubed
  • to taste salt and pepper
  • for frying vegetable oil

Instructions 

  1. 1. In a large mixing bowl, combine the cooked rice, grated Parmesan cheese, and beaten eggs. Mix well.
  2. 2. Season the mixture with salt and pepper to taste.
  3. 3. Take a small handful of the mixture and flatten it in your palm. Place a cube of mozzarella cheese in the center and shape the rice around it to form a ball. Repeat with the remaining mixture.
  4. 4. Roll each rice ball in breadcrumbs until evenly coated.
  5. 5. Heat the vegetable oil in a frying pan over medium heat. Fry the rice balls in batches until golden brown and crispy, about 3-4 minutes per side.
  6. 6. Remove the rice balls from the oil and drain on paper towels. Serve hot.
