Italian Rice Pie
A traditional Italian dessert made with rice, ricotta cheese, and a hint of lemon.

Main Ingredients
- 1 cup uncooked rice
- 2 cups water
- 1 cup ricotta cheese
- 1 cup sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon grated lemon zest
- ¼ teaspoon salt
- ½ cup milk
- ½ cup heavy cream
- ¼ cup candied citron, chopped (optional)
Preheat oven to 350°F (175°C).
Cook rice in water until tender, about 20 minutes. Let cool.
In a large bowl, mix ricotta, sugar, eggs, vanilla, lemon zest, and salt.
Stir in cooked rice, milk, cream, and citron.
Pour mixture into a greased pie dish.
Bake for 1 hour or until set and golden.
Let cool before serving.
