Ingredients 

Main Ingredients

  • 1 cup uncooked rice
  • 2 cups water
  • 1 cup ricotta cheese
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated lemon zest
  • ¼ teaspoon salt
  • ½ cup milk
  • ½ cup heavy cream
  • ¼ cup candied citron, chopped (optional)

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Cook rice in water until tender, about 20 minutes. Let cool.
  3. In a large bowl, mix ricotta, sugar, eggs, vanilla, lemon zest, and salt.
  4. Stir in cooked rice, milk, cream, and citron.
  5. Pour mixture into a greased pie dish.
  6. Bake for 1 hour or until set and golden.
  7. Let cool before serving.
