Ingredients 

Main Ingredients

  • 1 cup Arborio rice
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 tablespoons Olive oil
  • 6 cups Chicken broth
  • 1 cup Diced tomatoes canned
  • 1 cup Spinach fresh, chopped
  • to taste Salt and pepper
  • ½ cup Parmesan cheese grated

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until softened.
  3. Add Arborio rice and cook, stirring, for 2 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and simmer for 20 minutes, stirring occasionally.
  6. Add diced tomatoes and chopped spinach. Cook for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with grated Parmesan cheese.
