Italian Sausage and Gnocchi Soup

Main Ingredients
- 1 lb Italian sausage casings removed
- 1 package gnocchi
- 1 onion diced
- 2 cloves garlic minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups spinach fresh, chopped
- to taste salt and pepper
1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
2. In the same pot, add the diced onion and cook until translucent. Add the minced garlic and cook for another minute.
3. Pour in the chicken broth and bring to a boil. Add the gnocchi and cook according to package instructions.
4. Reduce the heat to a simmer and stir in the heavy cream, cooked sausage, and chopped spinach. Season with salt and pepper to taste.
5. Simmer for an additional 5 minutes, then serve hot.
