Italian Sausage and Pasta Soup

Main Ingredients
- 1 lb Italian sausage casings removed
- 1 Onion chopped
- 2 cloves Garlic minced
- 4 cups Chicken broth
- 1 can Diced tomatoes 14.5 oz
- 1 cup Pasta small shapes like ditalini or elbow
- 2 cups Spinach fresh, chopped
- to taste Salt and pepper
1. In a large pot, cook the Italian sausage over medium heat until browned. Remove excess fat.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Pour in the chicken broth and diced tomatoes. Bring to a boil.
4. Add the pasta and cook until al dente, about 10 minutes.
5. Stir in the chopped spinach and cook until wilted. Season with salt and pepper to taste.
6. Serve hot and enjoy!
