Ingredients 

Main Ingredients

  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz can
  • 4 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup pasta small shapes like ditalini or elbow
  • to taste salt and pepper
  • 1 cup spinach fresh, chopped

Instructions 

  1. Heat a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it up with a wooden spoon as it cooks.
  2. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.
  3. Pour in the diced tomatoes and chicken broth. Add the dried basil and oregano. Bring to a boil.
  4. Add the pasta and cook according to the package instructions until al dente.
  5. Season with salt and pepper to taste. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  6. Serve hot and enjoy!
