Italian Sausage Soup with Tortellini

Main Ingredients
- 1 lb Italian sausage casings removed
- 1 Onion chopped
- 3 cloves Garlic minced
- 4 cups Chicken broth
- 1 can Diced tomatoes (14.5 oz)
- 1 cup Carrots sliced
- 1 cup Zucchini sliced
- 1 package Cheese tortellini (9 oz)
- 1 teaspoon Dried basil
- 1 teaspoon Dried oregano
- to taste Salt and pepper
1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
2. In the same pot, add the onion and garlic. Cook until softened.
3. Add the chicken broth, diced tomatoes, carrots, zucchini, basil, and oregano. Bring to a boil.
4. Add the tortellini and cooked sausage. Reduce heat and simmer until tortellini is tender, about 10 minutes.
5. Season with salt and pepper to taste. Serve hot.
