Ingredients 

Main Ingredients

  • 1 Spaghetti Squash medium-sized
  • 1 lb Italian Sausage casings removed
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 cup Marinara Sauce
  • 1 teaspoon Olive Oil
  • to taste Salt and Pepper
  • ¼ cup Parmesan Cheese grated, optional

Instructions 

  1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle the cut sides with olive oil and season with salt and pepper. Place cut side down on a baking sheet and roast for 40-45 minutes, until tender.
  3. While the squash is roasting, heat a large skillet over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon.
  4. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
  5. Stir in the marinara sauce and let it simmer for a few minutes. Adjust seasoning with salt and pepper.
  6. When the squash is done, use a fork to scrape out the strands into a large bowl. Toss with the sausage mixture.
  7. Serve hot, topped with grated Parmesan cheese if desired.
