Italian Sausage Spaghetti Squash Recipe

- 1 Spaghetti Squash medium-sized
- 1 lb Italian Sausage casings removed
- 1 Onion diced
- 2 cloves Garlic minced
- 1 cup Marinara Sauce
- 1 teaspoon Olive Oil
- to taste Salt and Pepper
- ¼ cup Parmesan Cheese grated, optional
Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
Drizzle the cut sides with olive oil and season with salt and pepper. Place cut side down on a baking sheet and roast for 40-45 minutes, until tender.
While the squash is roasting, heat a large skillet over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon.
Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
Stir in the marinara sauce and let it simmer for a few minutes. Adjust seasoning with salt and pepper.
When the squash is done, use a fork to scrape out the strands into a large bowl. Toss with the sausage mixture.
Serve hot, topped with grated Parmesan cheese if desired.
