Ingredients 

Main Ingredients

  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 can diced tomatoes 14.5 oz
  • 1 package cheese tortellini 9 oz
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup spinach chopped
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, cook the Italian sausage over medium heat until browned. Remove excess fat.
  2. 2. Add the diced onion and minced garlic. Cook until the onion is translucent.
  3. 3. Pour in the chicken broth and diced tomatoes. Bring to a boil.
  4. 4. Add the cheese tortellini, dried basil, and dried oregano. Reduce heat and simmer for 10 minutes.
  5. 5. Stir in the chopped spinach and cook for another 2-3 minutes. Season with salt and pepper to taste.
