Instructions
1. In a large pot, cook the Italian sausage over medium heat until browned. Remove excess fat.
2. Add the diced onion and minced garlic. Cook until the onion is translucent.
3. Pour in the chicken broth and diced tomatoes. Bring to a boil.
4. Add the cheese tortellini, dried basil, and dried oregano. Reduce heat and simmer for 10 minutes.
5. Stir in the chopped spinach and cook for another 2-3 minutes. Season with salt and pepper to taste.
