Ingredients 

Main Ingredients

  • 1 large Spaghetti Squash halved and seeded
  • 2 tablespoon Olive Oil
  • 3 cloves Garlic minced
  • 1 cup Cherry Tomatoes halved
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • ½ cup Parmesan Cheese grated
  • to taste Salt and Pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Drizzle the cut sides of the spaghetti squash with olive oil and season with salt and pepper. Place cut-side down on a baking sheet and roast for 40-45 minutes, until tender.
  3. While the squash is roasting, heat the remaining olive oil in a skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  4. Add cherry tomatoes, oregano, and basil to the skillet. Cook until tomatoes are soft, about 5-7 minutes.
  5. Once the squash is done, use a fork to scrape out the strands into a large bowl. Add the tomato mixture and toss to combine. Top with grated Parmesan cheese.
  6. Serve warm and enjoy!
