Ingredients

  • 1 lb Italian sausage casings removed
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 can crushed tomatoes (28 oz)
  • 1 can kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 cup chicken broth
  • 2 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional

Instructions 

  1. 1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
  2. 2. In the same pot, add the diced onion and cook until translucent. Add the minced garlic and cook for another minute.
  3. 3. Return the sausage to the pot. Stir in the crushed tomatoes, kidney beans, black beans, chicken broth, and tomato paste.
  4. 4. Add the oregano, basil, salt, black pepper, and red pepper flakes. Stir well to combine.
  5. 5. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
  6. 6. Serve hot, topped with grated Parmesan cheese if desired.
