Italian Style Winter Soup
A hearty and warming Italian-style soup perfect for winter.

Main Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken or vegetable broth
- 1 can cannellini beans, drained and rinsed (15 oz)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups chopped kale
- 0.5 cup grated Parmesan cheese (optional)
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
Add garlic and cook for another minute.
Stir in diced tomatoes, broth, beans, oregano, and basil. Bring to a boil.
Reduce heat and simmer for 30 minutes.
Add kale and cook for another 5 minutes until wilted.
Season with salt and pepper to taste. Serve hot, topped with Parmesan cheese if desired.
