Ingredients

  • 1 cup All-purpose flour
  • ½ cup Cold butter cubed
  • ¼ cup Ice water
  • 4 cups Tomatoes sliced
  • 1 cup Mozzarella cheese shredded
  • ½ cup Parmesan cheese grated
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Fresh basil chopped

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and cubed butter. Mix until crumbly.
  3. Add ice water gradually and mix until dough forms. Roll out dough and place in pie dish.
  4. Layer sliced tomatoes in the pie crust. Sprinkle with salt, pepper, and olive oil.
  5. Top with mozzarella and Parmesan cheese.
  6. Bake for 40 minutes or until crust is golden and cheese is bubbly.
  7. Garnish with fresh basil before serving.
