Meatballs
- ½ lb ground beef
- ½ lb ground pork
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 egg beaten
- 2 cloves garlic minced
- 1 teaspoon salt
- ½ teaspoon black pepper
Soup
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 8 cups chicken broth
- 1 cup small pasta like acini di pepe
- 4 cups baby spinach packed
- ¼ cup grated Parmesan cheese for serving
1. In a mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Mix well and form into small meatballs.
2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and cook until softened.
3. Add chicken broth and bring to a boil. Gently add meatballs and cook for about 10 minutes.
4. Add pasta and cook according to package instructions until al dente.
5. Stir in spinach and cook until wilted. Serve hot with grated Parmesan on top.
