Italian White Bean and Pancetta Soup Recipe

Main Ingredients
- 2 tablespoon olive oil
- 4 oz pancetta, diced
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cans white beans, drained and rinsed 15 oz each
- 1 can diced tomatoes 14.5 oz
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups spinach, roughly chopped
Heat olive oil in a large pot over medium heat. Add pancetta and cook until crispy.
Add onion, carrots, and celery. Cook until vegetables are tender.
Stir in garlic and cook for another minute.
Pour in chicken broth, white beans, diced tomatoes, thyme, and rosemary. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Season with salt and pepper. Stir in spinach and cook until wilted.
