Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 4 pieces chicken breasts boneless, skinless
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 can white beans drained and rinsed
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • ¼ cup grated Parmesan cheese optional, for serving

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken breasts and cook until browned on both sides, about 5-7 minutes per side. Remove and set aside.
  3. In the same skillet, add diced onion and cook until translucent, about 5 minutes.
  4. Add minced garlic and cook for another minute.
  5. Add white beans, chicken broth, oregano, and basil. Stir to combine.
  6. Return chicken breasts to the skillet. Bring to a simmer and cook until chicken is cooked through, about 15 minutes. Season with salt and pepper to taste.
  7. Serve hot, optionally topped with grated Parmesan cheese.
