  • 4 zucchini medium-sized
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 clove garlic minced
  • 1 tablespoon olive oil

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the seeds to create a boat shape.
  3. Brush the zucchini boats with olive oil and place them on a baking sheet.
  4. In a mixing bowl, combine marinara sauce, garlic, Italian seasoning, salt, and pepper.
  5. Spoon the sauce mixture into the zucchini boats.
  6. Top with shredded mozzarella and grated Parmesan cheese.
  7. Bake for 25 minutes or until the zucchini is tender and the cheese is bubbly and golden.
