  • 0.5 cup all-purpose flour
  • 1 large egg, beaten
  • 2 cloves garlic, minced

Instructions 

  1. Grate the zucchinis and squeeze out excess moisture.
  2. In a bowl, mix zucchinis, Parmesan, flour, egg, garlic, salt, and pepper.
  3. Heat olive oil in a pan over medium heat.
  4. Scoop spoonfuls of the mixture into the pan, flattening them into fritters.
  5. Cook until golden brown, about 2-3 minutes per side.
  6. Drain on paper towels and serve warm.
