Leftover Chicken Croquettes
Great way to use up leftover chicken. Crispy on the outside, tender on the inside.

Main Ingredients
- 2 cups Leftover chicken, shredded
- 1 cup Mashed potatoes
- ½ cup Breadcrumbs
- 1 Egg beaten
- ¼ cup Chopped parsley
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- 2 tablespoon Olive oil
1. In a mixing bowl, combine the shredded chicken, mashed potatoes, breadcrumbs, beaten egg, chopped parsley, salt, and black pepper.
2. Form the mixture into small patties.
3. Heat olive oil in a frying pan over medium heat.
4. Fry the patties until golden brown on both sides, about 3-4 minutes per side.
5. Serve hot with your favorite dipping sauce.
