  • 1 large egg
  • ¼ cup chopped green onions

Instructions 

  1. In a bowl, mix mashed potatoes, flour, egg, green onions, salt, and pepper.
  2. Heat oil in a skillet over medium heat.
  3. Scoop ¼ cup of the mixture and flatten into a pancake shape.
  4. Cook each side for 3-4 minutes until golden brown.
