Ingredients 

Crust

  • 1 cup unsalted butter softened
  • 2 cup all-purpose flour
  • ½ cup powdered sugar

Filling

  • 4 large eggs
  • 1 ½ cup granulated sugar
  • ¼ cup all-purpose flour
  • 2 teaspoon lemon zest
  • cup freshly squeezed lemon juice

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine softened butter, 2 cups of flour, and powdered sugar. Press into the bottom of a baking dish.
  3. Bake crust for 20 minutes or until golden brown.
  4. In another bowl, whisk together eggs, granulated sugar, ¼ cup flour, lemon zest, and lemon juice. Pour over baked crust.
  5. Bake for an additional 20 minutes. Let cool before cutting into bars.
