- 1.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 1 cup sugar
- 2 large eggs
- 0.5 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup grated zucchini
- 1 tablespoon lemon zest
- 2 tablespoon lemon juice
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, beat the sugar and eggs until light and fluffy. Add the oil, vanilla extract, lemon zest, and lemon juice. Mix well.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated zucchini.
Pour the batter into the prepared loaf pan. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
