  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions 

  1. Rinse the rice under cold water until the water runs clear.
  2. In a saucepan, bring water to a boil. Add the rice, olive oil, and salt. Stir to combine.
  3. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.
  4. Remove from heat and let it sit, covered, for 5 minutes.
  5. Fluff the rice with a fork. Stir in the chopped cilantro and lime juice. Serve warm.
