Ingredients 

Main Ingredients

  • 200 g Pasta any short pasta
  • 2 fillets Salmon skinless
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ½ cup Red Onion thinly sliced
  • ¼ cup Olives sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Dried Oregano
  • to taste Salt and Pepper

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and set aside.
  2. 2. Season the salmon fillets with salt and pepper. Heat a pan over medium heat and cook the salmon for about 4-5 minutes on each side, or until fully cooked. Let it cool, then flake into pieces.
  3. 3. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, and flaked salmon.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Pour over the pasta salad and toss to combine.
  5. 5. Add the crumbled feta cheese and gently mix. Season with salt and pepper to taste. Serve chilled or at room temperature.
