Mexican Cornbread

Main Ingredients
- 1 cup Cornmeal
- 1 cup All-purpose flour
- 1 tablespoon Baking powder
- ½ teaspoon Salt
- 1 cup Milk
- ¼ cup Vegetable oil
- 2 Eggs
- 1 cup Corn kernels fresh or frozen
- 1 cup Shredded cheddar cheese
- 1 can Diced green chilies 4 oz can
Preheat your oven to 400°F (200°C).
In a large bowl, mix together the cornmeal, flour, baking powder, and salt.
In another bowl, whisk together the milk, vegetable oil, and eggs.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the corn kernels, shredded cheddar cheese, and diced green chilies.
Pour the batter into a greased baking dish.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let it cool slightly before serving. Enjoy!
