Mexican Street Vendor Style Corn Salad
A delicious and easy-to-make corn salad inspired by Mexican street vendors.

Main Ingredients
- 4 cups Corn kernels fresh or frozen
- 1 cup Cotija cheese crumbled
- ¼ cup Mayonnaise
- ¼ cup Sour cream
- 1 tablespoon Lime juice freshly squeezed
- 1 teaspoon Chili powder
- ¼ cup Cilantro chopped
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper to taste
Heat a skillet over medium-high heat. Add the corn kernels and cook until slightly charred, about 5-7 minutes. Stir occasionally.
In a large mixing bowl, combine the charred corn, Cotija cheese, mayonnaise, sour cream, lime juice, chili powder, cilantro, salt, and black pepper. Mix well.
Serve immediately or chill in the refrigerator for 30 minutes before serving.
