  • 2 cups all-purpose flour
  • 1 ¼ cups sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups grated carrots
  • 1 cup peeled and grated apple
  • ½ cup raisins
  • ½ cup shredded coconut
  • ½ cup chopped nuts (walnuts or pecans)
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, sugar, cinnamon, baking soda, baking powder, and salt.
  3. Stir in the carrots, apple, raisins, coconut, and nuts.
  4. In a separate bowl, whisk the eggs with the oil and vanilla. Pour into the flour mixture and stir until just combined.
  5. Divide the batter evenly among the muffin cups. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
