Moroccan Harira Soup Recipe

- 2 tablespoon olive oil
- 1 large onion, finely chopped
- 2 stalks celery, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 1 cup red lentils rinsed and drained
- 1 can chickpeas drained and rinsed
- 1 can diced tomatoes
- 6 cups vegetable broth
- 1 cup fresh cilantro chopped
- 1 cup fresh parsley chopped
- to taste salt and pepper

Heat the olive oil in a large pot over medium heat. Add the onion, celery, and garlic, and cook until softened, about 5 minutes.
Add the turmeric, cinnamon, ginger, cumin, and paprika, and cook for another 2 minutes, stirring constantly.
Add the lentils, chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the lentils are tender.
Stir in the cilantro, parsley, salt, and pepper. Simmer for another 5 minutes.
Remove from heat and stir in the lemon juice. Serve hot.
