Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 stalks celery, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 cup red lentils rinsed and drained
  • 1 can chickpeas drained and rinsed
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 cup fresh cilantro chopped
  • 1 cup fresh parsley chopped
  • to taste salt and pepper
  • 1 lemon juice of

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion, celery, and garlic, and cook until softened, about 5 minutes.
  2. Add the turmeric, cinnamon, ginger, cumin, and paprika, and cook for another 2 minutes, stirring constantly.
  3. Add the lentils, chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the lentils are tender.
  4. Stir in the cilantro, parsley, salt, and pepper. Simmer for another 5 minutes.
  5. Remove from heat and stir in the lemon juice. Serve hot.
