Ingredients 

Main Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup red wine
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 2 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon chopped fresh parsley for garnish

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add the beef and brown on all sides. Remove and set aside.
  2. 2. In the same pot, add the onion and garlic. Cook until softened.
  3. 3. Add the carrots and celery. Cook for a few minutes.
  4. 4. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
  5. 5. Add the beef back to the pot along with the beef broth, diced tomatoes, oregano, thyme, salt, and pepper.
  6. 6. Bring to a boil, then reduce heat to low. Cover and simmer for about 2 hours, or until the beef is tender.
  7. 7. Garnish with fresh parsley before serving.
