Ingredients

  • 4 pieces Chicken thighs bone-in, skin-on
  • 1 large Onion sliced
  • 2 cloves Garlic minced
  • 1 cup Bell peppers sliced
  • 1 cup Mushrooms sliced
  • 1 cup Tomato sauce
  • ½ cup Red wine
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat a large skillet over medium-high heat and add a bit of oil.
  2. 2. Season the chicken thighs with salt and pepper, then brown them in the skillet. Remove and set aside.
  3. 3. In the same skillet, add the onion, garlic, bell peppers, and mushrooms. Cook until softened.
  4. 4. Pour in the red wine to deglaze the pan, scraping up any browned bits.
  5. 5. Add the tomato sauce, oregano, and basil. Stir to combine.
  6. 6. Return the chicken to the skillet, cover, and simmer for about 30 minutes, or until the chicken is cooked through.
  7. 7. Serve hot with your choice of side.
