Ingredients

  • 1 cup mixed nuts (walnuts, almonds, cashews)
  • 1 cup cooked brown rice
  • ½ cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 egg (optional, for binding)

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, pulse the mixed nuts until coarsely ground.
  3. In a large bowl, combine the ground nuts, cooked brown rice, breadcrumbs, onion, garlic, soy sauce, olive oil, cumin, smoked paprika, salt, and pepper. Mix well.
  4. If the mixture is too crumbly, add the egg to help bind it together.
  5. Form the mixture into 4 patties.
  6. Heat a skillet over medium heat and cook the patties for about 3-4 minutes on each side until golden brown.
  7. Transfer the patties to a baking sheet and bake in the preheated oven for 10 minutes.
  8. Serve the nut burgers on buns with your favorite toppings.
