Ingredients 

Main Ingredients

  • 1 cup Rolled Oats
  • 1 cup Milk
  • 1 Egg
  • ½ cup Brown Sugar
  • ¼ cup Vegetable Oil
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 teaspoon Vanilla Extract

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a mixing bowl, combine the rolled oats and milk. Let it sit for 10 minutes.
  3. Add the egg, brown sugar, and vegetable oil to the oat mixture. Mix well.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the vanilla extract.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
