  • 2 Avocados halved and pitted
  • 4 Eggs
  • to taste Salt
  • to taste Pepper
  • optional Chopped chives for garnish

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. Scoop out some of the avocado flesh to make room for the eggs.
  3. Place the avocado halves on a baking sheet.
  4. Crack an egg into each avocado half.
  5. Season with salt and pepper.
  6. Bake for 12-15 minutes, until the eggs are cooked to your liking.
  7. Garnish with chopped chives if desired. Serve immediately.
