Ingredients 

Meatballs

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 egg beaten
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Soup

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 10 cups chicken broth
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup acini di pepe pasta
  • 3 cups baby spinach

Instructions 

  1. In a large bowl, mix together ground beef, breadcrumbs, Parmesan, egg, basil, oregano, salt, and pepper. Form into small meatballs.
  2. In a large pot, heat olive oil over medium heat. Add onion and garlic, cook until softened.
  3. Add chicken broth, carrots, and celery. Bring to a boil.
  4. Gently add meatballs to the pot. Reduce heat and simmer for 20 minutes.
  5. Add pasta and cook until tender, about 10 minutes.
  6. Stir in spinach and cook until wilted. Serve hot.
