Ingredients 

Pastry

  • 500 g plain flour
  • 250 g butter cold, diced
  • 1 teaspoon salt
  • 6 tablespoon cold water

Filling

  • 300 g beef skirt diced
  • 300 g potatoes diced
  • 150 g swede (rutabaga) diced
  • 1 medium onion chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 egg beaten, for egg wash

Instructions 

  1. 1. Preheat oven to 200°C (400°F).
  2. 2. In a mixing bowl, combine flour and salt. Rub in the butter until the mixture resembles breadcrumbs.
  3. 3. Add cold water gradually and mix until a dough forms. Wrap in cling film and chill for 30 minutes.
  4. 4. Roll out the pastry and cut into circles (about 20cm in diameter).
  5. 5. Mix the filling ingredients together in a bowl.
  6. 6. Place a portion of the filling on one half of each pastry circle. Fold the other half over and crimp the edges to seal.
  7. 7. Place the pasties on a baking sheet and brush with beaten egg.
  8. 8. Bake for 50-60 minutes until golden brown.
