  • 8 oz soba noodles
  • ¼ cup peanut butter creamy
  • 2 tablespoon soy sauce low sodium
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • 1 cup carrots shredded
  • 1 cup cucumber julienned
  • 2 tablespoon green onions chopped
  • 1 tablespoon sesame seeds toasted

Instructions 

  1. Cook soba noodles according to package instructions. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger until smooth.
  3. Toss the soba noodles with the peanut sauce until well coated.
  4. Add shredded carrots, julienned cucumber, and chopped green onions. Toss to combine.
  5. Garnish with toasted sesame seeds before serving.
