Ingredients

  • 2 lbs pork shoulder
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • 1 cup chicken broth
  • 4 units sandwich rolls
  • 1 cup sharp provolone cheese, shredded
  • 1 cup broccoli rabe, cooked

Instructions 

  1. Preheat oven to 325°F (165°C).
  2. Rub pork shoulder with olive oil, garlic, salt, pepper, oregano, and red pepper flakes.
  3. Place pork in a roasting pan and add chicken broth.
  4. Roast for 1 hour or until pork is tender.
  5. Shred pork and mix with pan juices.
  6. Serve on rolls with provolone cheese and broccoli rabe.
