Ingredients 

Main Ingredients

  • 4 lb Pork Belly with skin on
  • 1 tablespoon Salt
  • 1 tablespoon Black Pepper freshly ground
  • 2 tablespoon Fennel Seeds toasted and ground
  • 1 tablespoon Rosemary chopped
  • 1 tablespoon Thyme chopped
  • 6 cloves Garlic minced
  • 1 tablespoon Olive Oil

Instructions 

  1. 1. Preheat your oven to 325°F (165°C).
  2. 2. Lay the pork belly skin-side down. Score the meat in a crisscross pattern.
  3. 3. Rub the salt, pepper, fennel seeds, rosemary, thyme, and garlic into the meat.
  4. 4. Roll the pork belly tightly and secure with kitchen twine.
  5. 5. Rub the outside with olive oil and sprinkle with additional salt.
  6. 6. Place in a roasting pan and roast for 3 hours, or until the internal temperature reaches 160°F (71°C).
  7. 7. Let rest for 15 minutes before slicing.
