Instructions
1. In a large pot, melt the butter over medium heat.
2. Add the chopped onion and cook until translucent, about 5 minutes.
3. Add the diced potatoes and chicken broth. Bring to a boil.
4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
5. Stir in the milk, salt, and pepper. Heat through but do not boil.
6. Use a potato masher to slightly mash some of the potatoes to thicken the soup.
7. Serve hot and enjoy!
