Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • ½ teaspoon salt
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. Rinse quinoa under cold water.
  2. In a pot, bring water and salt to a boil.
  3. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat, let it sit for 5 minutes, then fluff with a fork.
  5. In a large bowl, combine quinoa, tomatoes, cucumber, red onion, parsley, and feta.
  6. Drizzle with olive oil and lemon juice.
  7. Season with salt and pepper, toss to combine.
