Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 1 can chickpeas drained and rinsed
  • 2 cups cherry tomatoes halved
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup vegetable broth
  • 1 cup water
  • ¼ cup fresh parsley chopped

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, combine quinoa, vegetable broth, and water. Bring to a boil.
  3. 3. Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked.
  4. 4. In a large bowl, combine cooked quinoa, chickpeas, cherry tomatoes, olive oil, cumin, paprika, salt, and black pepper.
  5. 5. Toss well to combine. Garnish with fresh parsley before serving.
