- 4 cups Whole Milk
- 1 cup Heavy Cream
- 1 teaspoon Salt
- 3 tablespoon Lemon Juice
1. In a large pot, combine the milk, cream, and salt. Heat the mixture over medium heat until it reaches 190°F, stirring occasionally to prevent scorching.
2. Remove the pot from heat and add the lemon juice. Stir gently and let it sit for 5-10 minutes. The mixture will curdle.
3. Line a strainer with cheesecloth and place it over a large bowl. Pour the curdled mixture into the strainer and let it drain for about 20 minutes.
4. Gather the cheesecloth and gently squeeze out any excess whey. Transfer the ricotta to a bowl and use immediately or refrigerate for up to 3 days.
