  • 2 eggplants medium-sized
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 sandwich rolls split
  • 1 cup hummus
  • 1 cup arugula

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplants into ½-inch thick rounds.
  3. Place the eggplant slices on a baking sheet and brush both sides with olive oil. Sprinkle with salt and pepper.
  4. Roast in the oven for 25-30 minutes, flipping halfway through, until the eggplant is golden and tender.
  5. While the eggplant is roasting, prepare the sandwich rolls by spreading a generous amount of hummus on each half.
  6. Once the eggplant is done, assemble the sandwiches by layering the roasted eggplant slices and arugula on the rolls.
  7. Serve immediately and enjoy!
