Roasted Eggplant Sandwiches
A delicious and easy-to-make roasted eggplant sandwich, perfect for a quick lunch or dinner.

Main Ingredients
- 2 eggplants medium-sized
- 2 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 sandwich rolls split
- 1 cup hummus
- 1 cup arugula
Preheat your oven to 400°F (200°C).
Slice the eggplants into ½-inch thick rounds.
Place the eggplant slices on a baking sheet and brush both sides with olive oil. Sprinkle with salt and pepper.
Roast in the oven for 25-30 minutes, flipping halfway through, until the eggplant is golden and tender.
While the eggplant is roasting, prepare the sandwich rolls by spreading a generous amount of hummus on each half.
Once the eggplant is done, assemble the sandwiches by layering the roasted eggplant slices and arugula on the rolls.
Serve immediately and enjoy!
